3 Month Mark on the Horizon

So, when I decided to do keto I told myself I would give it three months to see how it worked and how it could fit into my lifestyle.  That three month mark is quickly coming up over the horizon.  The date, December 17th!  I have to decide what I want to do.  Do I continue on Keto for another three months?  Do I just go into a calorie deficit and work out?  Do I just go into a calorie deficit and not work out (which is more like me)?  What do I do!?

Being on Keto has allowed me to loose almost 30 pounds in two months.  Most of that weight was put on during COVID and being home however, so to the outside world who is seeing me just thinks I look like I've always looked-but I really have lost weight (you just didn't know I gained before that lol).

One thing I have learned though doing Keto is that what is really the most important thing when trying to loose weight is that diets really don't work.  Fads or paid programs-not necessary.  What really works is cutting down on your calories to loose weight.  And of course, working out-which is not my thing.

I feel like a broken record.  I know people are sick of listening to me.  I can feel it and see it in their faces.  I mention the word "keto" and certain people laugh or give me a side glance because of what they have heard from someone else.  Which is fine, we all make assumptions about people based on what we have heard, and if you say you never have-well then you are a liar sir.  That is a fact.  Plus I find it ironic that people judge other people for how they eat, when they never want to be judged themselves about how they eat.  I find it ironic that someone would scoff at someone for "trying" to get or be healthier or loose weight, especially if they themselves are over weight and also not healthy.

I didn't really write this post to say good or bad things about keto or the people who love or hate it, it was mostly to try to work out in my mind how I would proceed with my journey after my three months are over.

I want to keep moving forward with my weight loss and I really do want to do low-carb/keto still-but not so strict with the macro counting.  I can't keep up with that shit my entire life.  Plus I love potatoes & popcorn!  I can have them sure, but if you have something like that on keto you have to lay off the other carbs that are like in your veggies-so you miss out on other things instead.

I understand that water is key as well, and you have to drink enough of it as you are loosing weight.  I have struggled with this most certainly!

Everything Bagel Seasoning

 So little known fact, I have loved everything bagels for about 29 years......which is when I had my very first one which I bought while working at a hospital in the town near me (years and years ago).  It was the best thing I ever had, and I became pretty obsessed with it (had it every day for breakfast).

I had to learn how to make it myself, so I could eat bagels on the weekends with cream cheese and sprinkle the stuff on top.  I love that you can buy it already made up these days, how amazing is that.

I still love my own, because I like to add in extra sea salt and extra dried onions.....mmmmm, it is EVERYTHING....

Anyway, it's super easy to make, here is my basic ingredients (add equal parts/or add in more of your fav of the following:

Sea Salt
Minced Dried Onions
Minced Dried Garlic
Poppy Seeds
Sesame Seeds (I use white)

Store in a jar of choice :) 

Enjoy one EVERYTHING you want to be awesome.

Chocolate Chip Cookies

 Y'all-I cannot even with these cookies, the are so dang good!  I won't write to much because I just want to share......the recipe!  I even typed it up if you want to download it and print it.

What you'll need:

1 ½ cup fine almond flour
¾ cup erythritol
1 stick melted butter
1 egg
1 teaspoon vanilla
½ teaspoon baking powder
½ teaspoon xanthan gum
¼ teaspoon salt
1 cup chocolate chips of choice

What you'll do:

Beat melted butter with sugar until well combined, add in egg and vanilla and beat for 15 seconds.  Add in all the dry ingredients and beat again until well combined.  Fold in chocolate chips.  Scoop out onto lined cookie sheet.  Bake for 12-15 mins depending on oven.  Let cookies cool on cookie sheet until firmed up.  Store in airtight container.

Keto "Bread" Sticks

So hands down my favorite snack!  Keto Bread Sticks.  They are honestly the best thing I've had in a very long time.  They are salty, a little crunch-from the crust as it cooks in the skillet-and cheesy!  I could eat this for breakfast, lunch, dinner or snack!

I even made some the last time Xander's girlfriend was over, and when she came in from outside she asked "What is that smell!?" I said, "Cheese" she came to look and seemed intrigued so I offered her some and she said it was amazing, 10 out of 10!  That is a great compliment from a teenager :) and I do not disagree with her at all!  It's that good!

What you'll need:

1 package of La Chona Panela Cheese
Spray Oil
Marinara
Garlic Salt (I use Lawry's)

What you'll do:

Heat non-stick skillet medium heat.  Slice cheese about 1/4 inch thick, or as thick as you want.  Spray pan with some oil and lay slices of cheese into the skillet-sprinkle with some garlic salt and let brown, flip and brown some more-about 4-5 mins per side depending on how hot your skillet is.

Serve with marinara of choice if you want.

Favorite Bra

Well, it happened!  I need to buy a new bra, I need to replace one that is now to big.  The one that is to big is my favorite bra though, and I've had it for years.  It doesn't adjust in the band-as it is a snap closure-so the fit can't be made smaller (unless I sew it I guess-but not willing to go that far).

So I ran to my online store that I like to get my bras and hoped for the best, hoped they had one similar - or if I was lucky the same one that I could get in a smaller band size.

Guess what?

Quick and Easy Steak Omelet Recipe

Like most other people on this planet, I have been working from home since March 2020 due to COVID-19.  I am in a great routine now, but I am still pressed for time when making breakfast.  I try to come up with easy and quick meals that are also keto friendly.

This morning I made a pretty darn good omelet.

What you'll need:

2 frozen slices of Steak-Umm's
1 oz of grated cheese of choice (I used Swiss)
2 tbs spinach (I used thawed and drained frozen)
2 large eggs
1/2 tbs of butter
little Lawry's Garlic Salt (on steak)

What you'll do:

Place 2 steak sections into your cast iron pre-heated skillet, continue to cook on med heat chopping as it starts to thaw and cook.  Once cooked, remove from heat and set aside (I like to drain the grease).

Add butter to skillet, whisk eggs and pour into skillet, as eggs start to set add in your cheese and whatever veggies you want that are cooked and ready to go and the cooked steak.  Flip one side of the omelet on to the other, to make a half moon.....cook until egg is set and cheese is melted.  ENJOY!

This is about 0 carbs lol :) 


90 Second Mug Bread

 90 Second Mug Bread

Well, here is a recipe for some quick bread for breakfast if you're interested....it literally was so easy & so quick.  The texture was what you'd expect from anything made with almond flour - but toasted up it was really yummy and a great alternative for some toast in the morning-if you're missing it and don't have a lot of time.

What you'll need:

1/3 cup almond flour (I used blanched/fine)
1/2 tsp baking powder
pinch of salt
1 large egg
1 tbs butter

What you'll do:

Put your butter into a mug or ramkin and microwave until melted (about 15-20 seconds), mix in the rest of the ingredients into melted butter (in mug) until well combined.  Microwave mixture for 90 seconds.  Let stand for 2 mins before slicing.  Mine made four slices of bread, perfect for breakfast sandwiches.

I don't have a specific person to credit for this recipe, as it is literally all over TikTok and the internet.  I basically only post any recipes to share what I like....and then how to make it.  Sometimes it is exact, sometimes it is totally different.  I think I will try this with just egg whites and see what I get, and I think I'll also try it with some flaxseed and some coconut flour....just giving them all a good "test".  This entire journey and blogging what I find is for me only really-so I can come back and see what works for me and keep track.  If you find something you like in the meantime-WONDERFUL!

Mask you Mug

Yesterday, during my lunch break I took some time to grab a few things I needed from the grocery store.  In my county it is still mandatory to wear face masks while food shopping in almost all the stores-which is fine, except I feel like I can not breath in them most of the time.  That makes me anxious, and I am already anxious by being in the store in the first place.  I hate going to the grocery store-I hate the way people treat each other, no one is ever nice.  People act like you're in their way all the time, people take up the entire isles instead of sharing the walk space, I just leave most of the time really stressed out.

So my shopping experience started to take a downward spiral when I was looking at the chicken breasts and I catch an older lady standing with her cart pointed right towards mine, really close.  I look over at her, and she clearly wants to be right where I am at and she is staring me down, and I can still see the scowl even through her mask.  I look back at the chicken and she inches closer-I look again, and she is scowling and staring.  I mouth the words "FUCK YOU LADY", in a silent whisper, and it hit me-I can do this to all the assholes that are rude.

By the time I was in the check out line, I had told about a half dozen people off and my mood was lighter, I was laughing-behind my mask.

Mozzarella Chicken

 Well, I am always looking for something the family can all enjoy, without the side glances and the questions..."is this keto?" to which I always reply "why yes darling, and it's just food"....because let's face it Keto is basically just eating meat and veggies on the daily!  It's not about just eggs, cheese and bacon-though you can have those too.....

So last night, I decided to make some chicken breasts......easy right?  Here is what I did.....

What you'll need:

6 chicken breasts (3 split) for quicker cooking
1 cup mozzarella cheese (grated)
1 jar of marinara of choice
Lawry's Garlic Season Salt (to taste)
2-3 tablespoons of butter

What you'll do:

Pre-heat oven to 375.  In a 9x12 casserole dish-put in about 1/4 cup of the marinara, spread it around to coat the bottom.

Heat a skillet with a tablespoon of butter (while that heats up, sprinkle your chicken breasts with a little bit of Garlic Salt, put in chicken breasts in batches-cooking 2 at a time about 5-8 mins per side depending on thickness.

Put chicken into casserole dish as they finish in the skillet.  When you get them all cooked, pour over the rest of the marinara.  Top with cheese.  Bake in the oven for about 15-20 mins.  You could even cut this down if your chicken is pretty much cooked through from the pan frying, or increase if you prefer not to cook the chicken prior to baking it.  If your chicken is more done, you could simply broil the dish to melt the cheese.

Note: for the photos, I cooked these in two different dishes this time-so I could add mushrooms to mine-my husband is not a fan and didn't want them to get "mixed"  into the main dish!  I am such a good wife, dang.

The family rated this a 10 out of 10.  We will for sure have this again!

Keto Friendly Granola Mix

One thing I really miss living the keto lifestyle is crunchy food.  I don’t typically eat granola, even on a standard diet-but I do love trail mix.  I also love  crunchy, as I said before.  I decided to try my hand on making some grain-free granola to snack on, have as cereal or top my yogurt with.

What you’ll need:

1 cup of sunflower seeds
1 cup of pecans
1 cup of unsweetened coconut flakes
1/4 cup of almond flour
2 tablespoons of egg whites
1 teaspoon of vanilla
1/4 cup swerve sweetener 
2 tablespoons butter
Sea Salt

What you’ll do:

Preheat your oven to 325 and line a large baking sheet with parchment paper.  In a medium boil, mix nuts, flour and coconut.  In a small bowl mix your egg whites until a little foamy, add in cooled melted butter, vanilla, sugar and a pinch of sea salt to taste.  Pour on top of nut mixture & mix well.

Spread this mixture on your prepared pan as evenly as you can, bake for 8-10 minutes at a time-stirring until toasty (20-30 mins).  Store in some cute mason jars and ENJOY!

This recipe was inspired by one just like it in my Southern Keto cookbook.  The only thing I really changed was the sugars because I wanted to use just one instead of two.  I hope you’ll love it as much as me.


My first SHEIN order!

 Well, first I'll just say-the shipping time is totally insane.  I see on TikTok that some buyers got their items like just a few days later, mine was ordered on October 8th and I didn't receive it until October @@.

Second, I was hoping everything would come that was ordered & would fit, here is what I ordered:

10 Thing's I've Learned One Month on Keto

 This week marks my fourth week on Keto fully.  I have remained in ketosis the entire time, I am not even sure how.  The first few weeks were so easy, and fun-I lost a lot of weight and I felt amazing.  The third week, I started to come down from that "high" and now in the forth week I am feeling discouraged and not sure what to do from here.  I mean, I'll keep going-I did make the commitment to stick it out for THREE months.  And honestly, this has been a good decision over all.

However, the first ten things I learned real quick was:

  1. I don't love things as much as I thought I would, such as eggs, cheese and bacon.  Growing up, and even being an adult I always limited my cheese and fatty meats.  It's just what I was taught growing up.  So when I started Keto I was like, yessss.....I can have my favorite foods, cheese and eggs.  Two weeks in, I am sick of cheese and eggs.  Not to mention, when I see recipes of cheese made into anything crunchy I get totally just grossed out by all the grease/oil.
  2. I do miss bread!  Again, something I didn't have all the time-maybe a slice once a week-but when you don't have the option to have any buttered toast with your runny eggs it's kind of disappointing.  I have tried keto low carb breads and they are disgusting.  I'd rather not have any then eat something that tastes like what I imagine cardboard to taste like.
  3. I do not even miss Sangria.  I really thought I'd have a hard time with this one, but turns out it wasn't a big deal at all to give up wine-and fun fact-you can still have some wines on Keto.  Just have to find the right ones.
  4. Chaffles get old, real quick and they basically taste like a dried up over cooked omelet.  Nothing more can be said about that.
  5. DRINK YOUR WATER!!!!  And try to drink more then your recommended amount if you can stomach it.
  6. EVERYONE HAS ADVICE.  Be it good or bad.  People, who didn't seem to worry about the fact that I am morbidly obese all have concerns with my kidneys and liver all of a sudden, because they "heard" keto can damage your organs.  And on the flip side of that, people who have been on keto before-and stopped all have advice on how I can improve my keto life.  The advice isn't asked for, and it isn't even helpful to be honest.
  7. My family will eat what I make, even if it's "healthy"....which is a big win for me.  If I make a "pasta" dinner with zoodles, they gobble it up!  In fact, when I make cheese mashed broccoli for myself because I have made them mashed potatoes, more times then not they take my side as well.  It's just that good.
  8. More inches then weight the forth week.  I didn't loose much at weigh in this last week, less then 1/2 of an ounce...but the inches off my bust, waist and hips is remarkable.  I can really tell when I put on my jeans, they slip on (out of the dryer) with no issues-no stretching just pure comfort!
  9. I am sleeping so much better.  I only wake up to pee once a nice, because-well water!
  10. I am working out, and actually enjoying it.  My frame of mind has improved and I feel better about myself-so much so that I am actually MOVING MORE, cleaning more, going to the grocery store and shopping instead of doing grocery pick ups.
I cannot wait for this list to expand...but that's all I got for now....

(little) Girls Weekend

 Finally getting around to blogging about our weekend with my darling nieces S&S.  I have to be honest, I was nervous about having three girls in the house-all excited, for more then 12 hours, under the age of 7.  Most nervous about having a very young gal at the house-without her mama.  But it all turned out wonderfully, and all three girls had a great time.  Miss O just adores her cousins, especially "the baby" as she so lovingly calls her.  Miss S2 didn't seem to mind, most of the time.  And when she did get tired of it, she let Miss O know....which was adorable.

The girls played all day, and then we had a little luncheon for Weston's 18th birthday.  The girls all eat good, they were starving by lunch time.  They also, ate all their icecream cake.  Later that evening, after they had supper and bathes we popped some pop corn and they watched TWO movies before one by one passing out.

The next day, their mama came and got them early-but we did have time for WAFFLES!  I of course used my little Dash Waffle maker <---you can get one here!  So cute.  I love that thing.

Anyway, I was able to snap just a few images of the two sisters together the day they came....are they not so beautiful?





Chocolate Coconut Fat Bombs

 I am sure you've heard me rave about my one and only keto cookbook, Southern Keto right?  Well yesterday after work I decided to make some candy, for myself, so I won't be tempted to snack on the Halloween candy that I bought for the kids.

This is a HIT, a must make-and it was so easy!!  I have so many ideas now.  I did mix up the original recipe a bit, and here is what I did.

What you'll need:

1/2 stick of salted butter
1/2 cup of shredded coconut
pink Himalayan Salt

What you'll do:

Put chips in a small bowl, and microwave for 20-30 seconds at a time, stirring in-between until it's smooth.  Add in butter cut up a little and stir stir stir until it is all melted together.  Add in coconut, stir again.  Spoon into my cute little heart shaped silicone tray that I just picked up at the Dollar General Store.

This made 15 small hearts.  I had some left over, so I put in some cupcake liners inside my cupcake pan and made 5 more-they are about the size of a peanut butter cup.  Sprinkled a little salt on them, stuck them in the freezer for a few hours.

They are So-So-So GOOD.

The recipe came from www.ketoislife.com, and the book states that this recipe makes 8 candies, 2 candies per serving at 1.4 net carbs per serving (165 calories, 13.9 fat, 3.9 protein, 4.4 carbs, 3.1 fiber).  Since mine made 15 plus those extra 5 I have no idea how many carbs they are, but I would say they are low ;)

How I am feeling?

This week has been a bit of a struggle for me, only because I am sick of cooking.  I am still cooking but I am tired of it.  I want to just have my husband bring something home.  No one in this house helps do anything, unless nagged about it 100 times.  So I feel a bit put upon on the daily.  When I am in the middle of cooking, one of them will come out sometimes, all disheveled from laying in their bed texting on their phone and walk over slowly, sniffing asking mmm what's for dinner?  This for some reasons pisses me off.  I am equally annoyed when they come out of their rooms when I say dinner is ready, looking like they just got up from a fucking nap.  I want a fucking nap!  One thing I read was you were supposed to have improved mood during KETO, and it is true-I do feel less annoyed but the things that annoyed me before-like that, still annoy me just as bad.  I am happy with my progress this week, though I have to stop weighing myself every single day, it can be disappointing if you wake up on weigh in day and are more then you were the night before.

I did add a probiotic to my routine, started that yesterday.  I guess it can take a while to feel the affects of that-so fingers crossed that was a good decision.  I am getting better at getting enough fat into my diet, though I seem to be getting them mostly from nuts since I can't seem to stomach lots of grease and dairy.  I am not sure why though, I just wake up in the morning and turn my nose up at eggs, cheese and meat.  So I have been doing an almond milk shake.  Though I think this morning I am going to try my hand at doing a veggie smoothie, wish me luck .

What I ate this week?

Breakfasts:
As mentioned above, a lot of breakfasts were skipped and I just had a shake.  But when I did eat I had a Keto German Pancake with homemade Blueberry Syrup, White Bread Ham, Egg & Cheese Breakfast Sandwich, Egg, Sausage & Strawberries & cream, Pancake Breakfast Sandwich with Egg and Canadian Bacon

Lunches:
Skipped some lunches and just had a gross dinner, but when I did eat I had Salmon Salad over Fresh Spinach, Chicken Salad Lettuce Cups & Pork Skins, Simple Salad, 1/2 low carb wrap with Ham & Cheese, Pork Skins

Dinners:
Sausage, Peppers & Cheese with Roasted Radishes, Bun less burger from Wendy's, Beef Brisket from Sonny's & Green Beans, Broccoli Cheese Soup, Cajun Foil Packet Chicken and Veggies, Baked Cod with Hushpuppies & Green Beans, Cheeseburger Mini Meatloaves and salad

Snacks:
Keto Krack. Coconut Chocolate Candy, 




Keto Kandy!

Sadly, I cannot give credit where credit is due because I have no idea who the original person that created this recipe is.  I saw it on Tiktok late at night one evening, and it was something a friend made the poster.  I couldn't find it when I was searching for it again-but lucky for me I did have my notebook on me and did jot down the ingredients so I could try it later.  So yesterday, I gave this "Keto Crack Candy" a shot....and it's GOOD, it's sweet!!!  It's really really sweet.  (click here to download the recipe)



What you'll need:

1/4 cup butter
1/4 cup brown sugar alt of your choice
1/4 cup powdered sugar alt of your choice
1/2 cup chopped walnuts
1/2 cup chopped pecans
1/4 cup of chocolate chips (I used white chocolate and dark chocolate Bake Believe chips)

Melt your butter in a pan, after melted add in your sugars and stir and watch until boiling and getting thicker.  Add in nuts (you can use what you want I am only listing what I used because that is what I had on hand).  Stir around for a few mins.  Pour mixture into a parchment paper lined 9x9 pan and smear around.  Top with chips, put in the fridge for a few hours until cool and firm.  Break apart and enjoy!

How am I feeling?

Hmmmm good question, I think I am feeling okay.  Mid-week turned into shark week, so I am just not happy in general.  It seems my hormones are leveling out and my periods are starting to become regular-they were not before.  I love the progress I am making, though I didn't loose as much as I did when I first started.

I have experimented with some recipes and even made a cake (mini bunts) they turned out great, and Olivia loved them.  Billy even loved it, and he is weird about the almond flour-and so am I if I am honest. I bought a big bag that was supposed to be extra fine-but it is grainer then the fine flour I have.  I may see if I can sift it myself and get it a little finer.  I'll keep you posted on that.

I find myself missing snacks, crunchy stuff.  I love crunchy food.  I did finally try pork skins.  The idea of what it is grosses me out and I have a hard time stomaching it.  I saw on TikTok you can air fry some low carb tortillas and make chips, so I am going to try that.

Thoughts & Decisions

 I am a pretty easy person to get along with.  Especially at the age I am now.  I am more carefree I guess, and a little less uptight.  If that is even the right word.  However, I don't always say the things I want to say, good or "bad".  I always think 10 steps ahead and know if I stick up for myself the way that I do, I know it would cause issues in some relationships.  I keep that in mind every single time I have interactions with those people, as well as with the people associated with the individuals.  I know it often comes off as weak, or easy to bully and push around maybe.  But those days are slowly coming to an end.  I am tired of living the shadows of my own heart and mind.  I want to break free of the judgement and the criticism.  I want to feel good, and I want to speak my mind like they do.  I know that once I do speak my mind, and am totally honest it will cause problems.  I guess I am ready to deal with those issues once in for all.

I just to be me.  I just want to find my place in the world.  I just want to find things that work for me and make me happy.  I know that from the outside looking in, I may seem a little flakey.  I may seem like someone who cannot make up their mind about things.  And it's true, I do have a hard time finding diets, foods, and other things that work for me.  But that is why I try all different things.

It's easy for someone to sit back, and listen or see 5% of my life and judge me for that.  And that's fine, I guess.  I am human-I can admit it does bother me a little.  But just a little, maybe 5% lol.  But seriously, we just this one life. I want to be happy in it.  I want YOU to be happy in it with me.



Biscuits & Gravy Recipe (keto style)

 So one of my favorite breakfast foods of all time is biscuits and gravy.  I love it with or without sausage.  I just love it.  I love the flavor, the way it fills you up, and how easy it is to make.  I didn't think I'd have it ever again.  Well, one of the main reasons I bought SOUTHER KETO (click here) was because I saw it had a recipe for keto biscuits (1.5g net carbs) and sausage gravy (1.5 net carbs) recipes.  I was so excited to give it a try.  My husband, who is NOT keto, had double-so that will tell you how it tasted.

I am still getting used to the texture of almond flour, not being as powdery (kind of grainy), but with the gravy over it-you don't even notice honestly.

Drop Biscuits

1 1/2 cup finely ground blanched almond flour
2 teaspoons baking powder
1/4 teaspoons salt
1/4 cup sour cream
2 large eggs
2 tablespoons salted butter, melted but not hot

  1. Preheat oven to 400, grease your baking sheet with oil or use parchment paper (I used my silicone liner)
  2. In a medium-size bowl, whisk flour, baking powder, and salt together.
  3. In a small bowl, whisk eggs, sour cream, and butter together.
  4. Pour into the flour mixture, and mix well.
  5. Allow batter to sit for 5 mins
  6. Drop the batter by the large spoonfuls on a prepared baking sheet about 2 inches apart and bake for about 10-12 mins.
  7. Allow to cool a bit and enjoy!
One thing I noticed about this recipe is that when I did large spoonful's I only got six biscuits; maybe my spoons are giant, IDK-but just food for thought :) 

Sausage Gravy

1 pound bulk breakfast sausage
1 cup heavy whipping cream
3/4 cup water
1/2 teaspoon xanthan gum (not necessary but does add some thickness)
salt & pepper to taste

  1. In a large skillet over medium heat, brown sausage until done (get it nice and crumbly)
  2. Reduce heat to low and stir in cream, water, and xantham gum.
  3. Stir stir stir, until it gets thick.
  4. Add more water if it gets too thick.
  5. Add in salt and pepper as you like it (or whatever other spices you like)
  6. ENJOY OVER THOSE BISCUITS, GIRL!

Cajun Chicken Zoodles Recipe (so so good)

Cajun Chicken Zoodles

What you'll need:
4 chicken breasts (boneless/skinless cut into cubes)
4-5 small to medium zucchini (spiralized & steamed/drained of water)
1/2 cup of heavy whipping cream
2 tablespoons of butter
1 tablespoon of olive oil
1/2 cup parm cheese (grated)
2 gloves of garlic (crushed)
4-5 teaspoons of Tony's Seasoning (or any cajun style seasoning of your choice)
Salt/Pepper to taste

What you'll do:
  1. Mix chicken with cajun seasoning in a bowl until well coated.
  2. Heat large skillet (med-high heat).  Add in butter and olive oil.  Melt together.
  3. Add in chicken, brown until done (6-8 mins)
  4. After chicken is done cooking, add in garlic and mix for about 2 mins not letting garlic burn.
  5. Add in heavy cream, mix well.
  6. Toss in zoodles.
  7. Top with cheese.
  8. Remove from heat.
  9. Mix.
  10. Enjoy :)
When I first made this, I put the noodles in raw-but then the sauce got a little watery.  I didn't find that it took the flavor away, but I would have preferred it not to be so soupy.

Keto Check-in Week1

Keto check in, after one week.  Below are my stats:

Week One

10.5 pounds down
- 1/2 inch neck
- 3 inches bust (under)
- 1.5 inches arms
- 3.5 inches waist
- 1/2 inch hips- 1 inch thighs

How am I feeling?

This week hasn't been as hard as I thought it would be. Honestly, I thought I would miss potatoes really bad and really crave the sangria I was so happily to mindlessly have whenever I wanted to.  I didn't miss them at all, not even a craving.  I cooked pretty healthy, as I am still uncomfortable eating so much fat.  But from what I am learning from reading and listening to Podcasts, you can use your "fat burning" from your own body, not necessarily in your intake.  There is a balance and a formula for it.  The family was pretty much on board with everything I have made.  I feel bad for them though, they have gone through so many diets with me over the years, I know they look at food I've made and thing-oh wonder what is in this?  They all didn't love whole wheat pasta as much as me when I was doing Weight Watchers.  I mean, I am not trying to get ahead of myself or anything but this week has been easy, and I honestly think I found something that truly works for me.

I have been sharing it a little on social media.  I am sure my friends and family are rolling their eyes at me, as they have watched me struggle and watched me jump around from one diet/food plan, trying out being vegetarian, flexitarian-the works.  I know I'll get some eye rolls....and I am prepared for that I guess.  I can only tell them that I struggle with this, and I have found something that works for me.  And that I love them and hope they can support me even if they don't agree.


So the day I started KETO was on Thursday.  I had practiced some recipes the week before-and read all about it (or as much as I could) while trying to make the decision to what I was going to do.  I decided mid-week to just do it-so I didn't waste time with waiting until "Monday".  The very next day, Friday-was our 10 year anniversary.  Crap, so the second day on Keto I was going out to dinner.  I had read what a struggle that was for people.  Lucky for me, my husband picked a local steak joint we really love.  So I happily got a steak, salad and green beans.  I didn't partake in the amazing homemade bread they put on our table and I was okay with it.  I had a plan.....and this time I thought to myself-I am going to DO IT!
