Recipe - Zero Point Homemade Chicken Sausage

Zero Point Chicken Sausage

1 1/2 pounds of ground chicken*
1 tsp poultry seasoning
1 tsp dried thyme leaves
1/2 tsp black pepper
1/2 tsp white pepper
1/2 tsp cayenne pepper (I also like red pepper flakes)
1 tsp salt
1/4 tsp garlic powder
1/4 tsp onion powder
1/8 tsp ground cloves
1/8 tsp ground nutmeg
**you can use whatever spices you like for sausage**

Put your ground chicken into a bowl that has a lid and set aside.  Mix the spice together in a smaller bowl and then sprinkle on top of your chicken, mix that really well getting all those yummy spices all mixed into the meat.  Put the lid on your bowl of chicken and let marinate in the refrigerator over night.

The next morning, when you're ready to enjoy, prep your non-stick skillet with a few sprays of cooking oil on medium heat.  Pat out your sausage into 16 patties, place in your hot skillet and cook sausage until completely (about five minutes on each side).

*you can grind your own chicken as well using two or three chicken breasts

WW & Eating Out Around OUR Town

Well good morning, today I did a little research about what to eat while out and about that has low points, I read a few blogs but they points are not adding up in my app (purple).  So I am creating this little cheat sheet, basically for myself - but if someone else wants to use it that is fine by me - and I am only adding in food because I don't drink any of their "fat" coffee drinks, soda or juice.  I have water or unsweetened tea.  And I am really only adding items that I would actually eat to this list, since this is---well, my list haha.

Brush your Teeth

So this morning was like all work day mornings, I wake up tired.  Squinting and hiding my eyes from the bright runway lights of our bathroom vanity as I pee and then scramble to brush my teeth.  I do this barely looking, mostly feeling my way around.  I grab my toothbrush, slather it with my toothpaste-turn on the brush and jam it into my mouth and start scrubbing.  Top teeth, 1, 2, 3, 4, 5....yes, I still count.....bottom teeth.....1, 2, 3, 4, 5.....and then I open my eyes and look at myself in the mirror vigorously brushing my gums, teeth....all of it.  I open my eyes wider in surprise, and honestly disgust as I notice I am using a BLUE brush, not a PINK one.....

So WW rolled out a new program recently, and you get to pick which one works best for you:

Green (100+ zero point foods) the most points to "spend"
Blue (200+ zero point foods) most like freestyle with a moderate amount of points to "spend"
Purple (300+ zero point foods) the least amount of points to "spend", I get a mere 25 points a day.

Having said that, I did pick the purple plan-because it worked the best with my lifestyle and that of the families.  It still forces you to make good choices in your food choices and most specifically snacking since those points will be used mostly for snacking lol!

I will find it hard to eat whole wheat pasta and brown rice, but I have learned during my journey that spiralized veggies are amazing and so is riced veggies!  You really don't feel like you're missing out on much in that regards.

You know, I should challenge myself to eat an entire week using nothing but zero point foods!  That would mean I would need to drink my coffee black-hmmmm let me think about that for a moment, lol!  I guess I could always drink hot tea in the morning, I can stomach that with no sugar or cream.  I'll circle back to that at some point.

I hope that I can be successful in this journey, it's a lot harder then I ever really imagined.  I love food so much!  And food really does love me, lol :D

Apples & Sauce

I won't make a habit of this, but I do love me some sliced apples drizzled with about 1 tablespoon (maybe less) of Smuckers sugar free caramel sauce.  (1pt).  Not a bad little snack when you're craving something low in points and sweet.  This isn't something I am always craving, no need to warn me about sugar free items.  I got this.

21 day soda fix (update-update-update)

Update: Update: Update: So today is day 18-so that means come this weekend, I will have completed my CZ21DAYFIX!  I have fasted soda for 18 days, can you believe it?  I sure can't.  I feel much better, but today I wanted a soda.  I even thought, well I'll just grab one today-since I've been doing so good!  NO BRAIN!  NO YOU CANNOT TRICK ME!

Update: Update: So today is 13 and I am going out to lunch with a friend of mine today that I have not seen in a long time.  We used to work together, but she wised up and got a fantastic job that she loves and makes more money to (win win)....anyway, we are going to lunch today and this will be a great test for me to just order water or unsweet tea.  I have not been out to eat much since I gave up Coke Zero.  Wish me luck!

Update: Well today is day 10-so I have had no soda in a little over a week.  This past weekend, I felt great-had lots of energy and was taking care of things that I was just to sluggish to take care of before in the ways of house work.  So I got a lot of things organized at home over the weekend with this extra energy.  I even got out of the house and went to the store in town to buy new bowls for the kids cereal, because they have broken all my other ones.  Ahh kids.  Which reminds me I need to clean out the cabinets next, things are very unorganized there because apparently the kids do NOT know how to put things away-lol!'s to the next 10 days of no soda and then one more day after that and I will have officially been off soda for 21 days - and completed my goal!

Well, I have tried to stop drinking Coke Zero about a gazillion times-so this time will hopefully not be the same as those times, hopefully THIS time I can stick to my "why".  I am working on day four of my twenty one day no soda fix.  And if I am being honest, all I am doing is thinking about my afternoon soda!  My brain is thinking of nothing but on day four.  The first three days were not as bad, as it was the weekend & I normally don't have one on the weekend-it's a rare treat if I do.  I had all together just stopped buying them for the house, so I could eventually get to this little experiment.  They say, that soda is bad for many many reasons-even diet soda.  To name a few:

  1. No nutritional value what so ever
  2. High in sugar (the body uses fake sugar the same as real)
  3. Can cause weight gain (duh)
  4. All chemicals (gross)
    1. can cause aggression
    2. ADD
    3. Lack of focus
    4. Abnormal brain function (just what I need right?)
  5. Heart Disease
  6. Caffeine addiction (and I guess I have it bad)
  7. Can cause soft bones
  8. Dehydration
  9. Weakens kidney & liver
I'm no doctor, but all of that is yucky stuff for sure.  I am saying this, as I sip on my very so boring flat water.  My daughter has given me some advice on some yummy fizzy water-that I will be trying out!  Get that fizzy fix.

1st Grade Photo

Well Olivia's first grade photos finally came in.  She's totally "cheesing" with her fake smile, but I don't mind-it's her as she is right now-not interested in having her photo taken lol

I dare not post it on facebook just yet.  I don't think the facebook community can handle the cuteness.  Aside from that, I think I've decided NOT to post so much on facebook as you will.  Maybe just on Insta from time to time.  Just to keep my fan's happy lol - jk of course, but you get my point right?

WW Friendly Pizza Dough

So I've made the two ingredient pizza dough before & it's "okay", I mean-it's better then NO PIZZA for sure.  But I have been seeing on a facebook group for WW recipes for a "skinny pizza dough" that is sort of the same, but with a few different ingredients.  I am thinking, this "skinny" version may be way way better!

What you'll need:

  • 1/2-3/4 cup of water
  • 1tsp of yeast
  • 1/2 tsp of salt
  • 1/2 cup of fat free Greek yogurt
  • 2 cups of self rising flour

What you'll do:

  1. Heat oven to 425
  2. Mix dry ingredients together in a bowl
  3. Stir in yogurt and mix until it starts to combine
  4. Start by adding in about 1/2 cup of water, add more by the tablespoon if there is loose flour in the bowl
  5. Dust counter top with about 2 tbs of four, add dough (should be a little sticky) - work until no longer sticky
  6. Sit dough back into bowl and let rest for thirty minutes
  7. Or roll it out and form into pizza crust and let sit for thirty minutes, poke with fork a few times to prevent bubbles
  8. Add toppings of your choice
  9. Bake on lined cookie/pizza sheet for about 14 minus
  10. ENJOY!

WW Sides Ideas, Part 1

I have the largest time with figuring out what sides to have with what.  Or just what sides to have in general.  You'd think it would be easier, because it's just veggies-but my mind just cannot wrap my head around not having potatoes or rice, I suppose.  It's the way I was raised, eating items from every food group.

I decided to write a blog post with some sides ideas, that I can refer back goes.....

One thing I have learned is that roasted veggies are amazing, I thought I would just go to heaven on the spot when eating roasted broccoli for the first time.

Last November, while I was in Portland visiting my daughter, son-in-law & my brand new and first Grandson my daughter started to teach me know to knit.  I came back to Florida, with the loom knitting bug and made several hats and scarves.  I just knew the one stitch.  I even bought myself (and my daughter) a afghan knitting board.  Once winter went away, the the hot summer Florida weather set in-I put the yarn away & didn't pick it up again until recently, with the encouragement of my daughter.

I have used an entire skein of yarn on the loom, and am ready to take it apart and start over.  I do not like the one stitch that I know how to do and i do not like the thickness of it, I used two strands and need to really go back and do one so it's more light weight and maybe not so heavy!

I have taught myself a new stitch, and started practicing with a scarf loom to maybe make myself an infinity scarf.  If that turns out, I'll make more as gifts for all the lovely ladies in my life (that like scarves).

Knitting is a lot harder then I figured it would be, even on a loom.  I had to get the right tools, as I kept breaking my hooks.  Cheap yarn is hard to work with, but as a beginner I don't want to spend a small fortune on yarn.  I will keep going, as it really is something nice to do with my hands while I sit mindlessly in the evening, trying to relax and it does help with that-until I get a knot, then I loose my shit and my stress level goes through the roof, lol!
